Best Ever Carrot Cake

resepi yang paling best bagi aku.
ramai yang dah mintak resepi ni. aku pun dah ejas sikit sebanyak dari resepi asal. ikut tekak seniri. 


pernah try version lain. tapi aku rasa yang ini lebih sedap.







minggu ni memang bz bebenar dengan tempahan mereka. sebenarnya aku dah setkan seminggu hanya 1 order je. tapi bila mereka berhajat, tak sampai hati menolak. setakat ni oklah. still boleh manage time. cuma penat takyah cerita lah.

Ingredients
2 cups plain flour
2 teaspoons baking powder - aku letak 1tsp je
1 1/2 teaspoons baking soda - aku letak 1tsp je
1 teaspoon salt
2 1/2 teaspoons cinnamon - aku tak boh
4 large eggs
1 1/2 cups oil
2 cups caster sugar
2 3/4 cups coarsely grated carrots
1 (8ounce) can crushed pineapple
3/4 cup chopped walnuts or pecans
1 cup shredded coconut or desiccated coconut - aku tak boh

Topping cream cheese frosting
1/2 cup butter
1 (8ounce) package cream cheese
1 1/2 teaspoons vanilla essence
1 lb icing sugar

Method
Sift together all dry ingredients.
In large bowl, stir together sugar, eggs and oil with wooden spoon until well blended, about 5 minute.
Add flour mixture a little at a time, mixing well after each addition.
Add carrots, nuts, pineapple and coconut and blend thoroughly (squeez juice from carrots and pineapple).
Bake in grease and line springform pan for about 60 to 90mins @ 180°C.

Cream cheese frosting - cream butter, cream cheese and vanilla. Add icing sugar a little at a time and blend well. Add a tsp of milk if the mixture too thick.






satu adunan dapat 2 tray 8x8.
aku buat 2 tray sebab ada yang nak sikit je. kalau nak bake sekaligus pun ok. dapat yg versi tinggi punya. atau nak double layerkan dia. pun boleh. mana2 berkenan di hati. :)
tapi aku lebih suka kek yang tak tinggi. senang nak makan.
